query_metrics was missing from the client since it was not implemented in llama_stack. llamastack/llama-stack#3074 adds query_metrics necessitating client types and resources for this route or else it is unusable/untestable.
Add the proper types, and resources for query_metrics as defined in the llama_stack telemetry API.
